Jerk Chicken

What is Jerk Chicken?

Jerk Chicken is a traditional dish originated from Jamaica, The Caribbean. One of the most popular dishes in the Caribbean, that is known by many across the world. It is a dish that was from the Taino's but was adopted by the Maroons from the 17th Century.

It is described as a smoky flavour of chicken that is cooked using a grill pan in which Jamaicans call it Jerk Pan. Jerk Chicken has spicy ingredients added such as Jerk Seasoning, and ingredients for marination. This food can go with meals such as Rice and Peas which is the common combination.

Variety of meat such as Pork and Fish can be used as alternatives to Jerk Chicken. The Jerk requires seasoning such as:

  • The Chicken itself
  • Salt and Black Pepper
  • Browning
  • Paprika
  • Jerk Seasoning
  • Chicken Seasoning
  • Garlic Powder
  • Peppers(Scotch Bonnet)
  • Scallion
  • All Purpose
  • Pimento
  • Anything to sweet it up (Red Stripe Beer or any of your choice)

In addition, the dish can go with Jerk Sauce which requires the juices from the chicken (or meat of your choice) and ketchup to mix in with.


Curry Chicken

What is Curry Chicken?

Curry Chicken or Chicken Curry is a dish that is coated with curry sauce originated from the South Asian continent. They are popular amongst other continents and regions such as The Caribbean, South Africa, Britain and Southeast Asia.

The dish can be made in different ways, but on the emphasis on the Caribbean it goes with traditional Jamaican seasonings and ingredients such as:

  • Chicken or Goat Meat
  • Garlic Powder
  • Puree
  • Paprika
  • Coconut Milk
  • Onions
  • Curry Sauce
  • Potatoes and Carrots

The Curry Sauce requires the water/juices out of the meat that is being fried out of the pot and then to mix it with the puree in the pan.

The dish compliments well with White Rice and Rice and Peas. The dish can also be alternated to Curry Goat (which is more known) and follows the same style of making just like the Chicken.

Curry Chickpeas is a vegan dish originated from India, which is also adopted in the Caribbean. Curry Chickpeas can contain:

  • Chickpeas Itself
  • Curry
  • Salt and Black Pepper
  • Puree
  • Coconut Milk
  • Paprika
  • Potato and Carrots
  • Onions and Scallions

This dish is considered to be one of the healthiest options a restaurant could offer, due to being natural and not coming from animals.This has been one of the most sold dishes in the African Pop Up Event.

Chickpeas can go with White Rice making it the most common meal. Henceforth Chickpea meal can be combined with other dishes. You can combine with Jerk Chicken or Escovitch Fish


Escovitch Fish

What is Escovitch Fish?

Escovitch Fish is a dish originated from Jamaica, The Caribbean. It is a dish described as A crispy, fried, marinated fish. The dish has ties with the Spaniards back in the 17th Century when the Island was under colonization during the time, back when the Spaniards would describe it as Escabeche fish, in their language.

To make Escovitch Fish this requires:

  • The Fish itself
  • Peppers
  • Escallion and Onions
  • Fish Seasoning
  • Salt and Black Pepper
  • Scotch Bonnet Pepper
  • Fish Sauce
  • Garlic

Note: Fish Sauce must come from the juices of the fried fish.

The dish is suitable for vegans.

Festival is a sweet tasting side dish coming from Jamaica, The Caribbean. This is similar to fried dumplings but less round and more sweet. This dish can be added with Jerk Chicken, Escovitch Fish, Oxtail and more.

  • Sugar
  • Cornmeal
  • Vanilla

Rice and Peas

What is Rice and Peas?

Rice and Peas is a dish originated from Jamaica, The Caribbean containing Rice and Kidney Beans (or even Gungo Peas). This is one of the well known dish to have with Jerk Chicken, Curry Goat, Escovitch Fish, Fried Chicken, Chickpeas ,Oxtail and more.

Rice and Peas is considered one of the most common dishes, and it is most likely the first that comes to mind of customers.

NOTE: Rice and Peas can differentiate in the type of peas used which may also change it in color it can either be Gungo Peas or Kidney Beans. Kidney Beans is favoured more by customers than Gungo itself.
